    Soak salted codfish in cold water overnight (or boil with two changes of water to remove salt). Flake into large pieces.

    Heat oil in a skillet. Sauté onion, garlic, and bell pepper until soft, about 5 min.

    Add tomato, scotch bonnet, and thyme. Cook 3 min.
  4. 4
    Add flaked codfish and cook 5 min, stirring gently.
  5. 5
    Fold in ackee carefully — do not mash. Season with black pepper. Serve with festival and fried plantains.
