4 boneless chicken thighs

8 strips thick-cut bacon

2 oz cream cheese, softened

2 tbsp chives, chopped

1 jalapeño, minced (optional)

1 tsp garlic powder

1 tsp smoked paprika

Toothpicks for securing

Mix cream cheese with chives, jalapeño, garlic powder, and a pinch of salt.

Pound chicken thighs flat. Spread cream cheese mixture over each.

Roll chicken tightly. Wrap each roll with 2 strips of bacon, securing with toothpicks.

Bake at 400°F for 30–35 min until bacon is crispy and chicken is cooked through (165°F internal).

Let rest 5 min before removing toothpicks. Serve with cauliflower rice.
