1 medium beet, peeled and chopped

2 large carrots, chopped

1 green apple, cored

1-inch fresh ginger

Juice of ½ lemon

1 cup cold water

Add beet, carrots, apple, ginger, and water to a blender.

Blend on high 60–90 sec until very smooth.

Strain through a fine mesh sieve for a juice consistency.

Stir in lemon juice for brightness.

Serve over ice. The deep red color is as beautiful as it is nutritious.
