1 tsp Worcestershire sauce

Spicy mayo (mayo + sriracha)

Gently mix bison with garlic powder, onion powder, Worcestershire, salt, and pepper. Do not overwork — bison is leaner than beef and gets tough.

Form 4 patties, slightly wider than the bun. Press a thumb indent in the center to prevent puffing.

Season again with salt and pepper. Grill over high heat 3–4 min per side for medium (internal 155°F).

Add cheese in the last minute. Toast buns.

Build burger: spicy mayo → lettuce → patty → tomato → red onion. Serve with crispy potatoes.
