    Season chicken with browning, allspice, thyme, salt, pepper, and half the garlic. Marinate 1 hour.

    Fry chicken in hot oil until deeply browned on all sides, about 4 min per side. Remove.

    Sauté onion, bell pepper, and remaining garlic until soft. Add ketchup and stock.

    Return chicken to pot with scotch bonnet. Cover and simmer 30–35 min until sauce thickens.

    Remove scotch bonnet. Serve over white rice with steamed vegetables.
