1 large head cauliflower, cut into florets

2 tbsp olive oil or butter

2 garlic cloves, minced

Juice of ½ lemon

Salt & pepper to taste

Fresh parsley, chopped

Pulse cauliflower florets in a food processor until rice-sized. Do not over-process.

Heat olive oil in a large skillet over medium-high heat.

Add garlic, cook 30 sec. Add cauliflower rice in an even layer.

Cook 5–6 min, stirring occasionally, until tender but not mushy.

Season with lemon juice, salt, pepper, and parsley. Serve as a low-carb rice substitute.
