    Cut cauliflower into 1-inch thick steaks through the center (you should get 2–3 per head).

    Brush with oil mixed with paprika, cumin, garlic, salt, and pepper.

    Roast at 425°F for 25 min, flip, roast 10 min more until golden and caramelized.

    Make chimichurri: blend parsley, red wine vinegar, chili flakes, garlic, and olive oil. Season well.

    Serve steaks with chimichurri spooned over the top.
