2 lbs chicken thighs, cut into 1.5-inch cubes

4 garlic cloves, minced

Juice of 2 lemons

3 tbsp olive oil

1 tbsp dried oregano

1 tsp smoked paprika

½ tsp cumin

Salt & black pepper

Wooden skewers, soaked 30 min

Combine garlic, lemon juice, olive oil, oregano, paprika, cumin, salt, and pepper in a bowl.

Add chicken cubes, toss to coat well. Marinate at least 2 hours, ideally overnight in the fridge.

Thread chicken onto soaked skewers, packing pieces snugly.

Grill over medium-high heat, turning every 3–4 min, for 12–15 min total until charred and cooked through.

Serve in warm pita with tzatziki, tomato, and red onion.
