½ medium green cabbage, finely shredded

2 large carrots, grated

⅓ cup mayonnaise

2 tbsp apple cider vinegar

1 tbsp honey or sugar

1 tsp celery seed

Salt & pepper to taste

Combine shredded cabbage and grated carrots in a large bowl.

In a small bowl, whisk together mayonnaise, vinegar, honey, celery seed, salt, and pepper.

Pour dressing over cabbage mixture and toss until evenly coated.

Refrigerate at least 30 min to let flavors meld — the longer, the better.

Toss again before serving. Great with BBQ, fried fish, or tacos.
