1½ lbs baby potatoes

3 tbsp olive oil

3 garlic cloves, minced

1 tsp smoked paprika

Fresh rosemary, chopped

Flaky sea salt & black pepper

Sour cream for dipping (optional)

Boil potatoes in salted water 15–18 min until fork-tender. Drain and let cool slightly.

Preheat oven to 425°F. Place potatoes on a lined baking sheet and smash each one flat with a fork or glass.

Drizzle generously with olive oil. Sprinkle with garlic, paprika, rosemary, salt, and pepper.

Roast 25–30 min, flipping halfway, until edges are deeply golden and crispy.

Serve hot with sour cream or your favorite dipping sauce.
