    Season goat with curry powder, allspice, thyme, salt, and pepper. Marinate at least 2 hours.

    Heat oil in a heavy pot over high heat. Sear goat in batches until browned. Set aside.

    Sauté onion and garlic until soft. Add remaining curry powder and toast 1 min.

    Return goat, add water and whole scotch bonnet. Bring to boil, cover, and simmer 1.5 hours.

    Add potatoes, cook 30 more min until goat is very tender. Remove scotch bonnet. Serve with rice & peas.
