    Heat oil in a wok over highest possible heat until smoking. Add garlic, stir 15 sec.

    Push garlic aside, add beaten eggs, scramble partially, then mix through.

    Add rice, breaking up any clumps. Stir-fry on high 3 min, tossing constantly.

    Add soy sauce, oyster sauce, and sesame oil. Toss well. Finish with scallions and white pepper.
