2 cups all-purpose flour

⅓ cup cornmeal

¼ cup brown sugar

½ tsp vanilla extract

½ tsp salt

½ cup water (approx.)

Vegetable oil for deep frying

Mix flour, cornmeal, sugar, and salt in a bowl. Add vanilla and enough water to form a soft, slightly sticky dough.

Knead briefly. Pinch off pieces and roll into 4-inch finger shapes, slightly tapered at the ends.

Heat oil to 350°F in a deep pot.

Fry festivals 3–4 min, turning occasionally, until golden brown all over.

Drain on paper towels. Serve warm alongside jerk chicken, fried fish, or curry goat.
