3 ripe plantains (yellow with black spots)

Vegetable oil for frying

Pinch of salt

Peel plantains and cut diagonally into ½-inch thick slices.

Heat ½ inch of vegetable oil in a skillet to 350°F.

Fry plantain slices 2–3 min per side until deep golden brown and caramelized.

Remove to a paper towel-lined plate. Sprinkle with salt while hot.

Serve immediately — the edges should be crispy and the center soft and sweet.
