3 cups day-old cooked rice (cold)

2 eggs, beaten

1 cup mixed vegetables (peas, corn, diced carrots)

3 green onions, sliced

3 tbsp soy sauce

1 tbsp sesame oil

2 tbsp vegetable oil

2 garlic cloves, minced

Heat vegetable oil in a wok or large skillet over high heat until smoking.

Scramble eggs quickly, break into small pieces, push to the side.

Add garlic and vegetables. Stir-fry 2 min.

Add cold rice, breaking up clumps. Toss everything together over high heat for 3–4 min.

Drizzle soy sauce and sesame oil. Toss to coat evenly. Garnish with green onions.
