1 lb yellow yam, peeled and cut into wedges

Vegetable oil for frying

Salt to taste

Scotch bonnet pepper sauce (optional)

Boil yam wedges in salted water for 10 min until just tender (not mushy). Drain and pat dry.

Heat 1 inch of vegetable oil in a heavy skillet to 360°F.

Fry yam pieces 4–5 min, turning once, until golden and crispy on the outside.

Drain on paper towels and season immediately with salt.

Serve hot with pepper sauce on the side.
