1½ cups couscous

1½ cups boiling vegetable broth

2 tbsp butter or olive oil

2 tbsp fresh parsley, chopped

1 tbsp fresh mint, chopped

Zest of 1 lemon

¼ cup toasted pine nuts

Salt & pepper to taste

Place couscous in a bowl with butter. Pour boiling broth over, stir, cover tightly with plastic wrap.

Let steam 5 min undisturbed.

Uncover and fluff with a fork, separating all grains.

Fold in parsley, mint, lemon zest, and toasted pine nuts. Season with salt and pepper.

Serve warm as a bed for grilled meats or alongside stews.
