    Blend scotch bonnet, garlic, thyme, allspice, sugar, soy sauce, lime juice, cinnamon, and nutmeg into a smooth marinade.

    Score the chicken deeply with a knife and coat thoroughly in jerk marinade. Marinate at least 4 hours (overnight preferred).

    Preheat grill or oven to 375°F. Grill chicken over medium heat, turning every 10 min, for 35–45 min until cooked through.

    Baste with remaining marinade in the last 10 min for a sticky, charred finish.

    Rest 5 min before serving. Serve with rice & peas and fried plantains.
