    Season chicken with salt, curry, and thyme. Fry in oil until golden brown on all sides, then set aside.

    In the same pot, sauté onions until soft, then add tomato paste and fry for 5 min until paste darkens.

    Add blended tomato-pepper mixture. Cook on medium heat for 20 min, stirring, until oil rises to the top.

    Add chicken stock and washed rice. Stir, cover tightly, and cook on low heat for 30 min until rice absorbs all liquid.

    Layer fried chicken on top, cover, and steam on the lowest heat for 10 min. Serve hot with fried plantains.
