    Mix soy sauce, brown sugar, mirin, garlic, sesame oil, grated pear, ginger, and gochujang into marinade.

    Score the ribs between bones. Marinate at least 4 hours (overnight recommended).

    Remove from marinade, pat dry. Grill over high heat 3–4 min per side for caramelized char.

    Alternatively, braise in marinade + 1 cup water for 2.5 hours at 325°F until fall-off-the-bone.

    Garnish with sesame seeds and scallions. Serve with steamed rice and kimchi.
