    Mix garlic, rosemary, thyme, lemon zest, paprika, and olive oil into a marinade. Coat lamb chops and marinate 30 min.

    Bring to room temperature 20 min before cooking.

    Heat a grill pan or cast-iron skillet over high heat until very hot.

    Season chops with salt and pepper. Sear 3–4 min per side for medium-rare (internal temp 135°F).

    Rest 5 min before serving. Serve with Greek salad and tzatziki.
