    Brown beef and pork in batches. Add mirepoix (onion, carrot, celery) and cook until soft.

    Add wine and cook until evaporated. Add milk and simmer until absorbed. Add tomatoes. Simmer 2 hours on very low heat.

    Make béchamel: melt butter, whisk in flour, gradually add milk, cook until thick. Season with nutmeg.

    Cook lasagna noodles. Layer in a baking dish: béchamel → noodles → bolognese → Parmesan. Repeat 3 times, finishing with béchamel and Parmesan.

    Bake at 375°F for 45 min, covered for first 30 min. Rest 15 min before serving.
