1 lb orzo pasta

3 tbsp olive oil

3 garlic cloves, minced

Zest and juice of 2 lemons

½ cup Parmesan, grated

¼ cup fresh basil, torn

Salt & pepper to taste

Cook orzo in salted boiling water until al dente. Reserve ½ cup pasta water, then drain.

In the same pot, heat olive oil over medium. Sauté garlic 30 sec until fragrant.

Add orzo back, toss with lemon zest, lemon juice, and Parmesan. Add pasta water 1 tbsp at a time if needed.

Season with salt and pepper. Fold in fresh basil.

Serve warm or at room temperature as a versatile side.
