4 lobster tails (6 oz each)

4 tbsp unsalted butter

4 garlic cloves, minced

Juice of 1 lemon

1 tbsp fresh parsley

½ tsp paprika

¼ tsp cayenne

Salt & black pepper

Extra butter for drawn butter

Using kitchen shears, cut through the top shell down to the tail. Gently lift meat out and rest it on top of the shell (butterfly cut).

Mix butter, garlic, lemon juice, parsley, paprika, and cayenne.

Brush lobster meat generously with garlic butter. Season with salt and pepper.

Broil on high, 6 inches from heat, for 8–10 min until meat is opaque and slightly browned.

Serve with extra drawn butter, lemon wedges, and mashed potatoes.
