1 lb elbow macaroni

3 tbsp butter

3 tbsp all-purpose flour

3 cups whole milk, warmed

2 cups sharp cheddar, shredded

1 cup Gruyère, shredded

1 tsp Dijon mustard

½ tsp smoked paprika

Salt & pepper to taste

Cook pasta 1 min short of al dente. Drain and set aside.

Melt butter in the same pot over medium heat. Whisk in flour to make a roux, cook 2 min.

Gradually whisk in warm milk. Cook, stirring constantly, 5–6 min until thickened.

Remove from heat. Stir in cheeses, mustard, paprika, salt, and pepper until smooth.

Fold in pasta. Serve creamy, or transfer to a baking dish and broil 3–4 min for a golden crust.
