4 black cod fillets (6 oz each)

½ cup white miso paste

¼ cup mirin

¼ cup sake

2 tbsp sugar

1 tbsp soy sauce

Sesame seeds for garnish

Whisk together miso, mirin, sake, sugar, and soy sauce to make the glaze.

Coat cod fillets thoroughly with glaze. Marinate in the fridge for 24–48 hours for best results.

When ready to cook, wipe off excess marinade (it burns easily).

Broil on high for 6–8 min, or until glaze is caramelized and deeply golden.

Garnish with sesame seeds and scallions. Serve with steamed rice and pickled vegetables.
