5 oz mixed salad greens (arugula, spinach, frisée)

¼ cup toasted walnuts or pecans

2 tbsp dried cranberries

1 shallot, thinly sliced

1 tbsp sherry vinegar

1 tsp Dijon mustard

Salt & pepper to taste

Whisk olive oil, sherry vinegar, mustard, salt, and pepper into a vinaigrette.

Place greens in a large bowl. Add shallot slices.

Drizzle vinaigrette over greens and toss gently.

Top with toasted nuts and dried cranberries.
