    Season oxtail generously with salt, pepper, browning, and soy sauce. Marinate 2 hours.

    Brown oxtail in batches in a heavy pot with oil, 4 min per side. Remove and set aside.

    Sauté onion and garlic in the same pot until soft. Return oxtail, add stock, thyme, allspice, and whole scotch bonnet.

    Bring to a boil, then cover and simmer on very low heat for 2.5–3 hours until meat falls off the bone.

    Add butter beans, simmer uncovered for 20 min to thicken gravy. Remove scotch bonnet. Serve with rice & peas.
