1 whole chicken, spatchcocked (or 4 thighs)

6 African bird's eye chilies (or red chilies)

4 garlic cloves

1 lemon, juice and zest

3 tbsp olive oil

1 tsp smoked paprika

1 tsp oregano

½ tsp salt

2 tbsp butter

Blend chilies, garlic, lemon juice, zest, olive oil, paprika, oregano, and salt into a smooth piri piri sauce.

Score chicken deeply and rub piri piri sauce all over, getting under the skin. Marinate at least 2 hours.

Grill chicken breast-side down over medium heat 15–20 min, then flip and cook 20–25 min more.

Baste frequently with pan juices. Internal temperature should reach 165°F.

Melt butter into remaining piri piri sauce and pour over chicken to serve.
