    Add garlic and ginger; cook 2 min. Add turmeric and cumin; toast 1 min.

    Add lentils, coconut milk, and stock. Stir well.

    Bring to a boil, then simmer 20–25 min, stirring frequently, until lentils are completely soft and creamy.

    Finish with lime juice and salt. Serve with warm naan or rice. The texture should be thick and porridge-like.
