1 ribeye steak (1.5 inches thick, ~16 oz)

2 tbsp neutral oil (avocado or canola)

3 tbsp unsalted butter

3 garlic cloves, smashed

4 sprigs fresh thyme

2 sprigs fresh rosemary

Coarse sea salt & freshly cracked black pepper

Remove steak from fridge 45 min before cooking. Pat dry thoroughly, then season generously with salt and pepper on all sides.

Heat a cast-iron skillet over highest heat until smoking. Add oil.

Sear steak 2–3 min per side without moving for a deep crust. Sear edges briefly.

Reduce heat to medium, add butter, garlic, thyme, and rosemary. Baste steak continuously with foamy butter for 2 min.

Rest on a rack for 8 min before slicing. Spoon pan butter over top. Serve with crispy potatoes or mashed potatoes.
