2 large sweet potatoes, cubed into 1-inch pieces

2 tbsp olive oil

1 tsp smoked paprika

½ tsp cinnamon

Fresh thyme (optional)

Preheat oven to 425°F. Toss sweet potato cubes with olive oil, paprika, cinnamon, garlic powder, salt, and pepper.

Spread in a single layer on a lined baking sheet — do not crowd.

Roast 25–30 min, flipping halfway, until caramelized and tender.

The edges should be crispy and the centers soft and creamy.

Serve warm, garnished with fresh thyme if desired.
