3 medium zucchini, halved lengthwise then sliced into half-moons

2 tbsp olive oil

2 garlic cloves, minced

1 tsp Italian seasoning

¼ cup Parmesan, grated (optional)

Salt & pepper to taste

Preheat oven to 425°F. Toss zucchini with olive oil, garlic, Italian seasoning, salt, and pepper.

Spread in a single layer on a baking sheet.

Roast 20 min until golden on the edges and tender.

Sprinkle with Parmesan in the last 3 min of roasting if desired.

Serve warm — pairs well with pasta, chicken, or fish.
