2 cans (15 oz each) navy or pinto beans, drained

4 slices bacon, chopped (or 1 tbsp smoked paprika for vegetarian)

1 small onion, diced

½ cup ketchup or tomato sauce

2 tbsp brown sugar

1 tbsp molasses

1 tbsp Dijon mustard

1 tsp smoked paprika

Preheat oven to 350°F. Cook bacon in an oven-safe pot until crispy. Remove bacon, keep drippings.

Sauté onion in drippings 3 min. Add ketchup, brown sugar, molasses, mustard, and paprika. Stir well.

Add beans and crispy bacon. Stir to combine.

Cover and bake 45 min. Uncover and bake 15 min more until thick and bubbly.

Let stand 10 min before serving — beans thicken as they cool.
