1 cup fresh lemon juice (about 6 lemons)

½ cup simple syrup (equal parts sugar and water, dissolved)

2 cups sparkling water, chilled

Lemon slices and mint for garnish

Make simple syrup: dissolve ½ cup sugar in ½ cup hot water. Cool completely.

Combine fresh lemon juice and simple syrup in a pitcher. Adjust sweetness to taste.

Just before serving, add chilled sparkling water. Stir gently to keep the fizz.

Fill glasses with ice and pour.

Garnish with lemon slices and fresh mint.
