2 sirloin steaks (6 oz each)

4 eggs

4 tbsp butter

3 garlic cloves, smashed

2 sprigs fresh thyme

1 tbsp neutral oil

Salt & black pepper

Hollandaise or hot sauce (optional)

Pat steaks dry, season generously with salt and pepper.

Heat oil in a cast-iron pan until smoking. Sear steaks 3 min per side for medium-rare. Add butter, garlic, and thyme; baste 1 min. Rest steaks 5 min.

In the same pan with remaining butter, fry eggs to your preference.

Slice steak against the grain.

Serve steak and eggs side by side with crispy potatoes. A squeeze of lemon or dash of hot sauce brightens everything.
