4 ahi tuna steaks (6 oz each, 1 inch thick)

3 tbsp sesame seeds (black and white)

2 tbsp soy sauce

1 tbsp sesame oil

1 tbsp rice vinegar

1 tsp wasabi paste

1 tbsp neutral oil for searing

Sliced scallions

Micro greens or arugula

Make dipping sauce: whisk soy sauce, sesame oil, rice vinegar, and wasabi. Set aside.

Coat tuna steaks on all sides with sesame seeds, pressing firmly to adhere.

Heat oil in a cast-iron skillet or heavy pan over highest heat until smoking.

Sear tuna 60–90 sec per side only — the center should remain raw and deep pink.

Slice against the grain, fan out on a plate over micro greens. Drizzle with sesame dipping sauce.
