1 cup Greek yogurt (full-fat)

1 English cucumber, grated & squeezed dry

2 garlic cloves, finely minced

1 tbsp olive oil

1 tbsp fresh dill, chopped

Juice of ½ lemon

Salt to taste

Grate cucumber on a box grater. Squeeze out as much liquid as possible using a clean towel.

Combine yogurt, cucumber, garlic, olive oil, dill, and lemon juice in a bowl.

Season with salt and stir well.

Refrigerate at least 30 min before serving — the flavor improves over time.

Drizzle with olive oil and serve with pita, grilled meats, or as a salad dressing.
