2 cups all-purpose flour

1 tsp instant yeast

1 tsp sugar

¾ tsp salt

¾ cup warm water

Mix flour, yeast, sugar, and salt. Add warm water and olive oil. Knead 8 min until smooth and elastic.

Cover dough and let rise 1 hour until doubled.

Divide into 6 balls. Roll each into a ¼-inch thick circle on a floured surface.

Heat a cast-iron skillet to high. Cook each pita 1–2 min per side until puffed and lightly charred.

Stack and wrap in a towel to keep warm and soft. Serve immediately.
